Resee’s Peanut Butter Cups were hands down my favorite candy growing up. They are the ultimate peanut and chocolate combo. Ridged milk chocolate cups filled with sweet and salty peanut butter. What’s not to love?

These Healthy Peanut Butter Cups are my take on the classic Reese’s. They are made with healthier, real food ingredients without the unnecessary additives and added sugar. The best part is how simple these are to make. You only need six basic ingredients, a muffin tin, and a little freezer time. Make batches of these to have on hand in the fridge for when a sweet craving hits.

Why You Will Love This Recipe

  • Minimal ingredients. This sweet treat only needs 6 ingredients. 
  • Easy and quick to make. Once the filling comes together, make them into little patties. Spread the melted chocolate on the bottom of the paper liners, add the patties in the middle, cover with more chocolate, and chill in the fridge. It is that easy.
  • No special equipment required. All you need is a standard muffin pan and paper liners. If you don’t have a muffin pan, you can also do fine with a baking tray.
  • No-bake dessert. No oven, no fuss! 
  • Gluten-free, vegan, refined sugar-free. They are very similar to Reese’s peanut butter cups, but without the unnecessary additives and added sugar.
  • Make-ahead friendly. They store and chill well in the fridge.

Ingredients You Need

  • Peanut butter. Use smooth peanut butter. You can either use regular or natural peanut butter. You can also substitute the peanut butter with almond butter if preferred.
  • Almond flour. This helps to stiffen the filling so you can shape it.
  • Maple syrup. It adds sweetness. Alternatively, you can replace it with honey.
  • Salt. A pinch in the filling or a sprinkle of flaky salt on top takes them up a notch.
  • Dark chocolate. Use a good-quality chocolate for the best flavor. You can swap the dark chocolate with milk chocolate or white chocolate if preferred.
  • Coconut oil. Adding oil to the chocolate when melting thins out the texture and makes it smooth and easier to coat the cups.

How to Make Healthy Peanut Butter Cups

  1. Make the filling. Mix peanut butter, almond flour, maple syrup, and salt until a dough forms. Scoop the filling and shape into balls. Flatten with your hands into small patties.

  2. Cover with chocolate. Melt the chocolate with coconut oil and spoon a tablespoon into the bottom of each liner. Put a patty in the middle of each liner. Cover the patties with the remaining melted chocolate.

  3. Chill for 20 minutes or until the chocolate hardens.
  4. Sprinkle sea salt flakes on top and enjoy!

How to Store

Store the peanut butter cups in an airtight container in the refrigerator for up to 1 week. This will prevent the chocolate from melting. If you like them soft, let them at room temperature for 10-15 minutes before enjoying them. If you like a crackly, snappy chocolate shell, you can eat them straight from the fridge.

For longer storage, you can freeze them in a freezer-safe container for up to 3 months. When ready to enjoy, let them thaw at room temperature before consuming.

Ingredients

Peanut Butter Filling

  • 1/2 cup (130 gr) smooth peanut butter
  • 1/3 cup (30 gr) almond flour
  • 2 tbsp maple syrup
  • 1/8 tsp salt

Chocolate Coating

  • 7 oz (200 gr) dark chocolate
  • 2 tsp coconut oil

Instructions

  • Line a muffin pan with paper liners. If you don't have a muffin pan, you can place the paper liners on a baking pan.
  • In a medium bowl, mix peanut butter, almond flour, maple syrup, and salt until well incorporated and a dough forms. Add more almond flour if the mixture is still too loose.
  • Scoop a tablespoon of the filling and shape into a ball. Flatten with your hands into a patty with a diameter just slightly smaller than the base of your paper liners. Continue until the filling is all used.
  • Melt together dark chocolate and coconut oil over a double boiler or in the microwave until smooth. Spoon about 1 tablespoon of the melted chocolate into each cup and spread it to cover the base.
  • Place the peanut butter patties into the center of each liner. Cover the cups with another spoonful of chocolate. Tap the pan to level out.
  • Refrigerate for 20 minutes or until completely set. Sprinkle with sea salt if preferred. Peel back the paper liners and enjoy!
