Ingredients
Peanut Butter Filling
1/2cup(130gr)smooth peanut butter
1/3cup(30gr)almond flour
2tbspmaple syrup
1/8tspsalt
Chocolate Coating
7oz(200gr)dark chocolate
2tspcoconut oil
Instructions
Line a muffin pan with paper liners. If you don't have a muffin pan, you can place the paper liners on a baking pan.
In a medium bowl, mix peanut butter, almond flour, maple syrup, and salt until well incorporated and a dough forms. Add more almond flour if the mixture is still too loose.
Scoop a tablespoon of the filling and shape into a ball. Flatten with your hands into a patty with a diameter just slightly smaller than the base of your paper liners. Continue until the filling is all used.
Melt together dark chocolate and coconut oil over a double boiler or in the microwave until smooth. Spoon about 1 tablespoon of the melted chocolate into each cup and spread it to cover the base.
Place the peanut butter patties into the center of each liner. Cover the cups with another spoonful of chocolate. Tap the pan to level out.
Refrigerate for 20 minutes or until completely set. Sprinkle with sea salt if preferred. Peel back the paper liners and enjoy!
