Silken Tofu Peanut Butter Mousse

This vegan Silken Tofu Peanut Butter Mousse is smooth, creamy, and light, topped with rich vegan chocolate ganache. You would never guess it is made with tofu!

If you love peanut butter cups, you will go nuts for this light and creamy Silken Tofu Peanut Butter Mousse. This incredibly silky peanut butter mousse is super easy to make and takes almost no time at all.
It is made in the blender with silken tofu, so it is naturally vegan. No gelatin, eggs, or cream cheese required! Just pop silken tofu, peanut butter, maple syrup, and vanilla extract into a blender and let it do its thing. To complement the mousse, I topped it with a thin layer of vegan chocolate ganache made from dark chocolate and coconut cream. It adds chocolatey richness to contrast with the nutty mousse.

Ingredients You Need
Peanut Butter Mousse
- Silken tofu. Any variety of silken tofu will work, but please do not use firmer tofu, such as extra-firm tofu. This variety will be way too thick and taste strongly of tofu.
- Peanut butter. Peanut butter is the main ingredient. We use it in both the filling and topping layers. For the best texture, I like to use a creamy peanut butter for this recipe. I tend to stay away from the natural peanut butter because you run the risk of it separating.
- Maple syrup. For extra sweetness. Choose real maple syrup and not the artificial high-fructose corn syrup stuff.
- Vanilla extract. To add depth of flavor.
Chocolate Ganache
- Dark chocolate. Use any dark chocolate or semi-sweet chocolate you like for the ganache topping. Finely chop it so that it melts easily and evenly.
- Coconut cream. We are keeping this chocolate ganache dairy-free by using coconut cream rather than heavy cream. You can also substitute the coconut cream with vegan heavy cream.

How to Store
Store Silken Tofu Peanut Butter Mousse covered in the refrigerator for up to 3 days. Do not freeze the mousse as it will change the texture.

Ingredients
Silken Tofu Peanut Butter Mousse
- 12 oz (340 gr) silken tofu
- 1/2 cup (125 gr) creamy peanut butter
- 1/4 cup (60 ml) maple syrup
- 1 tsp vanilla extract
Chocolate Ganache
- 3.5 oz (100 gr) dark chocolate, roughly chopped
- 1/2 cup (120 ml) coconut cream
- Roasted peanuts, finely chopped
Instructions
- Blend silken tofu, peanut butter, maple syrup, and vanilla extract in a blender until smooth.
- Pour the mixture into serving glasses.
- Add dark chocolate to a small heat-proof bowl. Place the bowl over but not touching simmering water in a saucepan (bain-marie). Stir until the chocolate has melted. Add coconut cream. Mix until well incorporated.
- Pour the chocolate ganache over the silken tofu peanut butter mousse.
- Garnish with peanuts.
- Chill in the refrigerator for at least 1 hour to let the mousse set.
