Ingredients
Silken Tofu Peanut Butter Mousse
12oz(340gr)silken tofu
1/2cup(125gr)creamy peanut butter
1/4cup(60ml)maple syrup
1tspvanilla extract
Chocolate Ganache
3.5oz(100gr)dark chocolate, roughly chopped
1/2cup(120ml)coconut cream
Roasted peanuts, finely chopped
Instructions
Blend silken tofu, peanut butter, maple syrup, and vanilla extract in a blender until smooth.
Pour the mixture into serving glasses.
Add dark chocolate to a small heat-proof bowl. Place the bowl over but not touching simmering water in a saucepan (bain-marie). Stir until the chocolate has melted. Add coconut cream. Mix until well incorporated.
Pour the chocolate ganache over the silken tofu peanut butter mousse.
Garnish with peanuts.
Chill in the refrigerator for at least 1 hour to let the mousse set.
