Cheddar Cheese Snowball Cookies

Melt in your mouth Cheddar Cheese Snowball Cookies are a fun twist to a traditional favorite. They do not taste cheesy as how they are named, but the cheddar cheese adds texture, richness, and creaminess to the classic snowball cookies.

Snowball cookies are one of those classics that many consider to be a must-bake during the holidays. Cheese is not typically included in snowball cookies. But when I searched for Indonesian snowball cookie recipes online, these Cheddar Cheese Snowball Cookies came out a lot. I decided to try it out and let me tell you that it works. If you have never added cheese to your cookies, maybe now it is time to start.

They do not taste cheesy although cheddar cheese is added to the dough. However, they taste so much richer, more tender, and creamier with the perfect melt-in-your-mouth bite! These cookies just became a new favorite of mine, and I hope you will enjoy them, too!

How to Make Them Cheesy?

Although cheddar cheese is added to the dough, you will not be able to taste the cheese inside. The amount of cheese is just enough to make the cookies a bit richer and creamier.

If you want them to taste cheesy, you can double the amount of cheese. Keep in mind that if you double the cheddar cheese, you will also alter the texture of the cookies. They will be much softer and creamier. Instead of adding more cheddar cheese, I recommend adding hard and saltier cheese, such as parmesan cheese, edam cheese, and gouda cheese to create a strong cheese flavor without making the cookies too soft.

Cheddar Cheese Snowball Cookies

Ingredients

  • 2/3 cup (150 gr) unsalted butter, room temperature
  • 1/2 cup (65 gr) confectioners’ sugar
  • 1 egg yolk
  • 1/2 tsp vanilla extract
  • 1/2 cup (40 gr) grated cheddar cheese
  • 1 3/4 cup (210 gr) all-purpose flour
  • 6 tbsp (45 gr) cornstarch
  • 2 tbsp (16 gr) milk powder
  • 1/2 tsp salt
  • Confectioners’ sugar, for coating

Instructions

  • Preheat oven to 300F/150°C and line a baking sheet with parchment paper or a silicone mat.
  • In a medium bowl, combine all-purpose flour, cornstarch, milk powder, and salt. Set aside.
  • In a large bowl, cream together butter with confectioners’ sugar until well combined.
  • Add egg yolk, vanilla extract, and grated cheddar cheese into the butter mixture and mix until well combined.
  • Sift in the flour mixture into the mixture and mix with a spatula until well incorporated.
  • Scoop out 1 1/2 teaspoons of dough. Roll the dough into balls. Arrange them on the prepared baking sheet.
  • Bake for 20-25 minutes or until the bottom edges of cookies are lightly browned.
  • Cool the cookies slightly until you’re able to handle the cookies. Roll in confectioners’ sugar when they are still warm and place on a rack to cool completely. When the cookies are completely cooled, roll them again in confectioners’ sugar.

Notes
