What Is Matcha?

Matcha is a Japanese powdered tea made from finely ground green tea leaves. This type of green tea leaves is grown in a special shaded environment, which boosts their chlorophyll content and produces a fine powder that’s a vibrant shade of green. Matcha has a naturally earthy, somewhat grassy flavor, which can vary in intensity depending on the type of matcha powder.

When mixed with hot water, the powdered tea disperses to form a brilliant green drink. Unlike when you drink steeped green tea, you consume the entire tea leaf in a matcha latte. As a result, matcha has approximately 10x more nutrients than regular green tea!

 

What Matcha to Use

Typically, there are two grades of matcha: 

  • Ceremonial grade. The highest quality matcha with a vibrant green color, the most caffeine content, and the least amount of bitter flavor. It should be used for drinking.
  • Culinary grade. The lower grade of matcha is intended for baking and cooking purposes.

The best matcha to use is ceremonial-grade matcha powder. It’s a higher quality than culinary-grade matcha and will have a better flavor, texture, and color which is best for creamy matcha lattes.

How to Make Banana Pudding

Made with homemade vanilla pudding, whipped cream, ripe bananas, and vanilla wafers, this recipe is the very best version you can make. Plus, it is surprisingly easy to make and a great no-bake dessert.

You will need to make the banana pudding a day ahead before making this Banana Pudding Matcha Latte. The pudding will firm up as it refrigerates overnight, and the banana flavor will intensify.

Recommended Tools to Make This Latte

If you love making beverages with matcha powder, I highly recommend getting these tools:

  • Bamboo whisk. It is also called chasen. It blends the tea powder and liquid well, introducing air to the mixture to create foam and froth. Before usage, you need to soak it in warm water for a few minutes to soften the prongs and make them more flexible, preventing breakage. This also helps to clean the whisk and remove any impurities. After soaking, gently shake off the excess water and it’s ready to use. 
  • Spouted matcha bowl. It is also called chawan, specially designed to make whisking and pouring much easier.
  • Milk frother. If you don’t have the bamboo whisk and matcha bowl, you can also whisk the matcha with a milk frother. It’s able to properly mix the matcha powder and water to create a homogenized mixture, while still creating the layer of froth on top.
  • Small fine-mesh strainer. Matcha is such a fine powder that it becomes lumpy as soon as the liquid is introduced. If you don’t sift the matcha, it will take a longer time to get rid of lumps.

  • Sift matcha through a fine-mesh sieve into a spouted bowl. Add hot water. Use a bamboo whisk (chasen) to whisk briskly, drawing a letter W or Z, until no lumps remain and a little foamy. You can also use a milk frother or small whisk if you don't have the bamboo whisk. Set aside.
  • Add milk, ice cubes, and sweetener into the serving glass. Pour in the matcha mixture.
  • Add scoops of banana pudding and crushed vanilla wafers on top. Serve immediately.

Notes

Sweetener options. You can sweeten the latte with simple syrup, honey, or maple syrup, or by whisking granulated sugar with the matcha powder and hot water.
Milk options. Use whole or skim dairy milk, soy milk, almond milk, cashew milk, coconut milk, or oat milk in your iced matcha latte, depending on your taste.
