I have found that silken tofu is just such a versatile ingredient and you can use it in so many different ways, like this right here. I substitute it for the heavy cream, which makes the mousse a whole lot healthier.

Ingredients You Need

  • Silken tofu. Any variety of silken tofu will work, but please do not use firmer tofu, such as extra firm tofu. This variety will be way too thick and taste strongly of tofu.
  • White chocolate. Either white chocolate chips or a chopped chocolate bar will work well, so use what you have! You can also use vegan chocolate for this recipe.
  • Matcha. Matcha is a type of green tea made from the powdered leaves of the Camellia sinensis plant. When purchasing matcha check that the powder is vibrant green in color, has an ultra-fine silky texture, and is packaged to limit exposure to air and light.
  • Vanilla extract. To add depth of flavor.

Tofu in Chocolate Mousse

One of tofu’s signature qualities is its neutral flavor. It is both the biggest complaint about tofu and its biggest advantage! Sure, it means you can’t simply gobble tofu on its own. However, it also means that you can make it taste like anything you want!

This Tofu Matcha White Chocolate Mousse is the perfect example. The use of tofu gives this dessert its thick, creamy texture, and a huge amount of plant-based protein per serving! And if you didn’t know that this mousse contained tofu, you would never have guessed it.

This recipe uses silken tofu which is soft, jiggly tofu, often referred to as Japanese tofu. It is made like regular firm tofu, but the soy milk is coagulated without curdling the milk. It results in a softer texture that is perfect to use in vegan dessert recipes. The recipe will work with other tofu varieties, but the taste won’t be as good. Other tofu varieties will be way too thick and taste strongly of tofu.

Pro Tips

The key to making this recipe is to use room-temperature silken tofu. You should not use cold tofu because melted chocolate firms up and hardens too fast if in contact with cold ingredients.

Ingredients

Mousse

  • 12 oz (340 gr) silken tofu
  • 6 oz (170 gr) white chocolate, melted
  • 1 tbsp matcha powder
  • 1 tsp vanilla extract

Toppings

  • Greek/coconut yogurt
  • Berries

Instructions

  • Blend silken tofu, melted white chocolate, matcha powder, and vanilla extract in a blender until smooth.
  • Pour the mixture into serving glasses.
  • Chill in the refrigerator for at least 1 hour to let the mousse set.
  • Top with toppings. Serve.

Notes

Use vegan white chocolate for vegan and dairy-free options.
