Ingredients You Need
- Silken tofu. Any variety of silken tofu will work, but please do not use firmer tofu, such as extra-firm tofu. This variety will be way too thick and taste strongly of tofu.
- Pistachio paste. You can buy ready-made pistachio paste from the supermarket or online. Alternatively, you can make pistachio paste from scratch. This involves blending pistachios until they form a paste, but I prefer to buy ready-made paste as it saves time.
- Maple syrup. For extra sweetness. Choose real maple syrup and not the artificial high-fructose corn syrup stuff.
- Vanilla extract. To add depth of flavor.
- Salt. To enhance the flavor.

How to Store
Store Silken Tofu Pistachio Mousse covered in the refrigerator for up to 3 days. Do not freeze the mousse, as it will change the texture.
