Cheeseburger Spring Rolls

Cheeseburger Spring Rolls combine everything you love about the beloved flavors of a classic cheeseburger and delightful crunch of a spring roll. They are the perfect appetizers for parties or picnics!

A tasty cheeseburger roll filled with juicy ground beef, onion, cheese, and pickles—all wrapped in spring roll wrappers! Inspired by Chinese fried spring rolls, but with an American-inspired burger filling.
These rolls are a great way to change things up! They got all the deliciousness of a cheeseburger, rolled up in a fresh, new way! Plus you can make them in bulk and freeze them for the perfect weeknight snack and appetizer.

What Type of Wrappers Do You Need for Spring Rolls?
Spring rolls are made with a thin, wheat-based wrapper. Layers of crispiness and browned to golden perfection–spring roll wrappers are one of the most important parts of spring rolls. Spring roll wrappers come broth frozen and refrigerated ready for use. While thin, they are pliable, easy to handle, and less fragile than you might imagine.
You may find other wrappers labeled similarly but that are actually made out of rice paper. You can still deep-fry rice paper wrappers, but the cooking technique is a little different and rolling them is more delicate.
Spring rolls historically came from ancient China and should not be confused with their American cousin, the egg roll. Egg roll wrappers are also wheat-based, but they are typically thicker and made with flour and egg which will cause the dough to blister when fried.
Ingredients You Need
Spring Rolls
- Spring roll wrappers. These wrappers are sold at Asian grocery stores. Nowadays, they are also widely available in supermarkets. Spring roll wrappers come broth frozen and refrigerated ready for use. You can also substitute the spring roll wrappers with egg roll wrappers if you can’t find them.
- Ground beef. Adds a classic beef burger flavor.
- Onion. White, yellow, sweet, or red onion will work just fine.
- Salt and pepper. For taste.
- Dill pickles. They are also known as gherkins. Chop them up and add to the beef mixture to add the classic pickle taste and tangy flavor.
- Burger cheese. For the truly classic cheeseburger experience, use processed cheese. Nothing oozes, stretches, and runs the way proper, luridly orange processed American cheese does when it melts. But feel free to swap them out for another melty cheese.
- Vegetable oil. For deep frying. If you are using an air fryer, grab your cooking spray.

Dipping Sauce
- Mayonnaise. Use a good quality mayonnaise. This is the base of the sauce.
- Ketchup. It brings sweetness and that familiar burger flavor.
- Yellow mustard. It adds depth and tanginess of mustard flavor.


How to Wrap Spring Rolls

- Place the spring roll wrapper on a flat surface with one of the four corners is facing toward you. It should look like a diamond. Place 1 slice of cheese and 2-3 tablespoons of beef mixture on the bottom corner.
- Roll the bottom corner over the filling.
- Fold over both the left and right sides of the wrapper towards the middle.
- Wet your finger on the top corner to seal. Continue rolling the spring roll into a tight cigar. Place it sealed side down.

Healthier Spring Rolls
For a real-deal spring roll experience, there is no denying that frying is the way to go. That’s how to make beautifully golden spring rolls that are flaky and crispy.
For healthier options, you can bake or air fry the spring rolls:
- Baking method. Place spring rolls on a rack and place the rack on a tray. Spray very generously with oil all over. bake at 400F/200°C for 20-25 minutes or until golden and crispy. No need to turn. The crispness is not quite the same delicate flaky crispness that you get from deep frying, but it is undeniably crispy.
- Air fryer method. Spray each spring roll with oil and place them in the air fryer basket, making sure that there is about some space between each. Cook them at 375F/190°C for 10-15 minutes, rotating the rolls halfway through the cooking time.
Storage
Leftover Cheeseburger Spring Rolls can be stored in an airtight container in the fridge for up to 3 days. Keep in mind that as it sits in the fridge, the wrapper will absorb moisture and no longer be crispy. Reheat in the air fryer or oven until crispy and the center is warm.

Make Ahead of Time
You can mix the cheeseburger filling a couple of days before you want to make the rolls. Then, just fold and cook when you’re ready. You can also form the spring rolls the night before you want to cook them and keep them covered in the fridge.
You can freeze the uncooked spring rolls on the tray lined with parchment paper or plastic wrap, ensuring they don’t touch until solid for about 2-3 hours. Then, transfer them to a zip-lock bag when they are completely frozen for future use. They will last for up to 3 months this way. To fry them once they’ve been frozen, just drop the frozen spring rolls directly in hot oil. Do not thaw them!

Ingredients
Spring Rolls
- 15 spring roll wrappers
- 15 slices burger cheese
- 1.1 lbs (500 gr) ground beef
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1 onion, finely chopped
- 1/3 cup finely chopped gherkins
- Cooking oil, for frying
Dipping Sauce
- 6 tbsp mayonnaise
- 6 tbsp ketchup
- 1 tbsp yellow mustard
Instructions
Spring Rolls
- Heat a large frying pan over a medium-high heat. Add 2 tbsp oil and add onion. Stir fry until the onion is soft and translucent.
- Turn off the heat and transfer the onion to a large bowl. Set aside.
- Heat the frying pan over a medium-high heat. Add ground beef and stir fry until the beef is brown and cooked. Season with salt and pepper.
- Turn off the heat and strain the fat off. Cool completely.
- Add the cooled ground beef and chopped gherkins into the bowl containing onion. Stir until well combined.
- Place a spring roll wrapper on the working surface angled like a diamond. Place a cheese slice on the bottom of the wrapper. Add 2-3 tbsp beef mixture on top of the cheese slice.
- Roll the wrapper by first folding up the bottom corner toward the top. Fold in the sides and roll all the way, wetting your finger on the last corner to seal the spring roll closed.
- Place the filled spring roll on a plate or baking tray with the sealed side down, then repeat with the remaining spring rolls.
- Heat oil in a large frying pan for deep frying to 370F/190℃.
- Once the oil is hot, carefully add 5-6 spring rolls, don't overcrowd the pan. Cook the spring rolls for 3-4 minutes until the spring rolls are golden brown.
- Remove from the oil and place on a wire rack or plate lined with a paper towel.
Sauce
- In a small bowl, combine all the ingredients until well incorporated.
