Cheeseburger Spring Rolls combine everything you love about the beloved flavors of a classic cheeseburger and delightful crunch of a spring roll. They are the perfect appetizers for parties or picnics!
Heat a large frying pan over a medium-high heat. Add 2 tbsp oil and add onion. Stir fry until the onion is soft and translucent.
Turn off the heat and transfer the onion to a large bowl. Set aside.
Heat the frying pan over a medium-high heat. Add ground beef and stir fry until the beef is brown and cooked. Season with salt and pepper.
Turn off the heat and strain the fat off. Cool completely.
Add the cooled ground beef and chopped gherkins into the bowl containing onion. Stir until well combined.
Place a spring roll wrapper on the working surface angled like a diamond. Place a cheese slice on the bottom of the wrapper. Add 2-3 tbsp beef mixture on top of the cheese slice.
Roll the wrapper by first folding up the bottom corner toward the top. Fold in the sides and roll all the way, wetting your finger on the last corner to seal the spring roll closed.
Place the filled spring roll on a plate or baking tray with the sealed side down, then repeat with the remaining spring rolls.
Heat oil in a large frying pan for deep frying to 370F/190℃.
Once the oil is hot, carefully add 5-6 spring rolls, don't overcrowd the pan. Cook the spring rolls for 3-4 minutes until the spring rolls are golden brown.
Remove from the oil and place on a wire rack or plate lined with a paper towel.

In a small bowl, combine all the ingredients until well incorporated.
