I love Japanese Coffee Jelly, but I am more of a tea person than a coffee person. The good news is that it is very easy to tweak the recipe into the tea version.

I use earl grey tea for this recipe, but you can definitely swap it with your own favorite tea, like oolong tea, jasmine tea, or black tea. The silky, jiggly earl grey jelly is subtly floral and slightly sweet. The jelly is topped with creamy, sweet maple cream, which makes it a refreshing and delicious chilled dessert!

Ingredients You Need

Earl Grey Jelly

  • Earl grey tea. Choose a good-quality earl grey tea that you enjoy drinking. Since it’s the star flavor, its aroma and taste will shine through in every bite.
  • Boiling water. To help steep the tea and dissolve the other ingredients.
  • Granulated sugar. To sweeten the jelly. You can adjust the sweetness based on your preference.
  • Gelatin powder. You can also replace this with other vegan gelling agents like kanten powder or agar-agar.

Maple Cream

  • Heavy cream. It is the key to creating that rich, creamy consistency of the cold foam. You can also use a vegan version to make this drink completely plant-based.
  • Milk. Add a splash of milk to the heavy cream base to keep it from getting too thick. You can also use non-dairy milk.
  • Maple syrup. It adds a rich, caramel-like sweetness.

Substitutions and Variations

  • Vegan option. Gelatin powder can be substituted with agar agar powder. You can also substitute the heavy cream with vegan heavy cream, milk with dairy-free milk, and condensed milk with other liquid sweeteners.
  • Tea. You can substitute earl grey tea with your favorite tea.
  • Shape. Instead of pouring the jelly into individual cups, you can set it in a small rectangular mold or tin. Then, cut the jelly into small cubes after the jelly has hardened.

Why Earl Grey Jelly Does Not Set Properly

There are a few things that may have caused this:

  • Gelatin is not dissolved properly. Make sure to mix it well in the hot water until the gelatin is fully dissolved.
  • Insufficient Chilling Time. Gelatin generally takes 4 to 6 hours to set in the refrigerator, though it can take up to 24 hours for a firmer consistency.
  • Not enough gelatin. If you find the jelly semi-set but still quite soft, try using an extra teaspoon of gelatin on your next round. That should help to give you a firmer set.

Ingredients

Earl Grey Jelly

  • 1 tbsp (4 gr) loose earl grey tea, or 2 tea bags
  • 1 1/4 cups (300 ml) hot water
  • 2 tbsp (25 gr) granulated sugar
  • 1/2 tbsp (5 gr) gelatin powder
  • 1 tbsp water

Maple Cream

  • 3 tbsp heavy whipping cream
  • 1 tbsp milk
  • 1 tbsp maple syrup

Instructions

Earl Grey Jelly

  • In a small bowl, bloom gelatin powder with water for 5-10 minutes. Set aside.
  • Add tea and granulated sugar to hot water. Stir and steep for 5 minutes.
  • Transfer the bloomed gelatin into the tea. Stir until gelatin is fully dissolved.
  • Strain the tea into a serving glass. Cool completely at room temperature.
  • Chill in the fridge for at least 4 hours or overnight until the mixture has set.

Maple Cream

  • In a small glass, add heavy whipping cream, milk, and maple cream. Whip with a milk frother or small whisk until slightly thickened.
  • Pour the cream mixture over the earl grey jelly. Enjoy!
