When you have the craving to bake, but don’t want something sweet and prefer something on the saltier side, these Garlic Cheese Cookies are for you! They are packed with cheesy flavour and a hint of garlic.

These cookies are incredibly delicious by themselves, but you can also get creative with your choice of cheese and herbs. They are a great treat to have as a party appetizer on their own or to decorate your cheese plates. Try this recipe out!

Ingredients You Need

  • Unsalted butter. Use good-quality butter for the best flavour. Soften your butter to room temperature for easy mixing.
  • Garlic powder. It adds a garlicky flavour to the cookies
  • Chicken stock powder. Adds richness and savoriness to the cookies. You can substitute it with salt.
  • Egg. It binds the ingredients together.
  • All-purpose flour. With enough protein to form gluten, it provides the necessary structure, preventing cookies from spreading or collapsing.
  • Edam cheese. Edam cheese is a semi-hard cheese from the Netherlands. You can substitute it with another sharp cheese.
  • Egg yolks. For egg wash. It creates a shiny, golden-brown finish, enhances colour, and acts as an adhesive for toppings.
  • Vegetable oil. The oil helps make sure the surface of the egg wash is shiny with a more even golden brown colour.
  • Dried parsley. Adds contrast colour.

Variations

  • Cheese. If you prefer your cookies to be strong in taste, use Edam, Gouda, or a combination of the two. For milder cookies, you can use Parmesan or cheddar.
  • Herbs. Add oregano, thyme, rosemary, scallions, chives, or freshly cracked black pepper to the dough for a change of flavour.

Yes, you can wrap your dough in plastic wrap and leave it in the refrigerator for 3 days or in the freezer for up to 2 months. When you are ready to bake these Garlic Cheese Cookies, simply thaw the dough in the fridge overnight.

Ingredients

  • 9 tbsp (125 gr) unsalted butter, room temperature
  • 1 1/2 tsp garlic powder
  • 1/2 tsp chicken stock powder or salt
  • 1 egg
  • 2 cups (250 gr) all-purpose flour
  • 3 oz (85 gr) finely grated Edam cheese, about 1 1/3 cups

Toppings

  • 2 egg yolks
  • 1/2 tsp vegetable oil
  • Dried parsley
  • Grated Edam cheese

Instructions

  • Preheat oven to 320℉/160℃ and line two baking pans with parchment paper.
  • In a large bowl, add unsalted butter, garlic powder, and chicken stock powder. Mix with a spatula until well incorporated.
  • Add egg and mix until well incorporated.
  • Sift in all-purpose flour. Add edam cheese. Mix with the spatula until slightly combined. The mixture looks dry first. Bring it together into a ball with your hand. Don't overmix or the cookies will become tough.
  • Roll the dough into a 1/4-inch (5 mm) thick slab. Cut the dough with a round 1.5-inch (4 cm) cookie cutter. Place the cut dough on baking sheets, spaced at least an inch apart. Re-roll the scraps and repeat the process until all the dough is used.

Toppings

  • In a small bowl, add egg yolks and vegetable oil. Mix until combined.
  • Brush the top with egg yolk and sprinkle with grated cheese and dried parsley.
  • Bake for 25-30 minutes until golden brown.
  • Transfer the cookies to a wire cooling rack to cool completely.

Notes

Use weight measurement for the best result.
You can substitute Edam cheese for Gouda, Parmesan, or sharp cheddar cheese by weight.
