These Chocolate Date Energy Balls are sweet, decadent, and healthy energy booster. Easily made in just minutes, they are the perfect guilt-free on-the-go breakfast, snack, or even dessert.

Valentine’s Day is approaching quickly and I am all for a little guilty pleasure every now and again. I tend to throw in a few health aspects just to make it more quilt free and these Chocolate Date Energy Balls are no exception.

These Chocolate Date Energy Balls are the perfect snack for all of you that are looking for a healthy chocolate recipe to offer your heartfelt thanks and appreciation. In addition, this mighty power booster is loaded with both proteins from the walnuts alongside natural sweetness that comes from the dates and savoriness from coconuts. A little bit of cocoa powder is added to add nice bitterness which keeps on bringing me back for more. These energy balls are perfect as your guilt-free sugar-buster when you need something sweet and boost your day.

How to Make Chocolate Date Energy Balls

The basic idea of making these energy balls is to throw everything together in the food processor. Firstly, I process the walnuts in the food processor until well-chopped and crumbly. At this point, the biggest thing you want to lookout for is to not over-process the nuts. If you blend them for too long, the oil is going to come out. They will still taste fine but it makes greasy oily balls. For best results, process the walnuts for no more than 5 to 10 seconds at a time. Be sure to watch them carefully to prevent over-processing.

Secondly, I put in the pitted dates, shredded coconuts, and cocoa powder into the food processor. I also add some coconut oil to bind everything together easily. Blend them all together until everything is broken down, still crumbly, but sticks together when pressed between your fingers. Then, divide and roll them into balls. You need to put them in the refrigerator to set before serving though.

Ingredients

  • 1 cup (110 gr) walnuts
  • 1 cup (170 gr) medjool dates, pitted
  • 1/2 cup (50 gr) shredded unsweetened coconut
  • 1/4 tsp salt, for taste
  • 1/2 tsp vanilla extract
  • 1 tbsp coconut oil
  • 2 tbsp cocoa powder

Coating

  • Cocoa powder
  • Shredded unsweetened coconut

Instructions

  • Process walnuts in food processor until well-chopped and crumbly. Do not over-process.
  • Add dates, shredded coconut, salt, vanilla extract, coconut oil, and cocoa powder into the food processor. Process until everything is broken down and crumbly, but still sticks together when pressed with fingers.
  • Scoop a tablespoon of dough and roll to form balls.
  • Coat each balls with cocoa powder or shredded coconut.
  • Place the balls in the fridge or freezer for at least 30 minutes to set before serving.
