Ingredients
1cup(110gr)walnuts
1cup(170gr)medjool dates, pitted
1/2cup(50gr)shredded unsweetened coconut
1/4tspsalt, for taste
1/2tspvanilla extract
1tbspcoconut oil
2tbspcocoa powder
Coating
Cocoa powder
Shredded unsweetened coconut
Instructions
Process walnuts in food processor until well-chopped and crumbly. Do not over-process.
Add dates, shredded coconut, salt, vanilla extract, coconut oil, and cocoa powder into the food processor. Process until everything is broken down and crumbly, but still sticks together when pressed with fingers.
Scoop a tablespoon of dough and roll to form balls.
Coat each balls with cocoa powder or shredded coconut.
Place the balls in the fridge or freezer for at least 30 minutes to set before serving.
