These Strawberry Snowball Cookies have such a strong sweet and tangy strawberry flavor thanks to the freeze-dried strawberries. They are perfect for holidays and the beautiful pink color makes them suitable for Valentine's Day!
Preheat oven to 300℉/150℃ and line a baking sheet with parchment paper or a silicone mat.
Using a mixer or spatula, mix butter and confectioners sugar until combined. Add vanilla extract and milk. Mix until well combined.
Sift in cake flour, strawberry powder, and salt. Add almond powder and freeze-dried diced strawberries. Mix with a spatula until well incorporated.
Scoop 1 teaspoon of dough and roll into balls. Arrange the balls onto the prepared pan.
Bake the cookies for 20 minutes. Remove from the oven and cool the cookies slightly.
In a small bowl, mix confectioners' sugar and strawberry powder for the sugar coating.
While the cookies are still warm, roll them in the sugar coating.
Cool the cookies completely before transferring them into an airtight container.
Notes
Make sure to measure the flour correctly if using volume measurement. The cookies will end up too dry if you add too much flour. Use a spoon to scoop the flour into the measuring cup. Then, level the top with a knife or other straight-edged utensil.
