Ingredients
2largeonions, cut into 0.5 inch/1 cm round slices
1 1/4cups(150gr)all-purpose flour
1tbspcornstarch
1tbspbaking powder
1tspsalt
1tspground pepper
1tbspcayenne powder
1egg
1cup(240ml)cold sparkling water
Oil, for frying
Instructions
Separate the onion slices into rings. Set aside.
Heat the oil to 365F/185°C in a large frying pan. The oil should be enough to cover the onion rings, for about 1-inch deep oil.
In a medium bowl, stir together all-purpose flour, cornstarch, baking powder, salt, black pepper, and cayenne powder. Dip the onion slices into the flour mixture until they are all coated. Set aside.
Whisk the egg and sparkling water into the flour mixture until well combined. Dip the floured rings into the batter to coat.
Once the oil is hot enough, deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown.
Once the rings have finished cooking remove them from the oil and lay onto a paper towel to drain.
