Ingredients
3egg yolks
1/4cup(50gr)granulated sugar
2cups(480ml)heavy whipping cream, divided
1cup(180gr)roughly chopped bittersweet chocolate

Instructions
Beat egg yolks and granulated sugar with electric mixer for about 3 minutes or until the mixture is pale and light.
Heat 1/2 cup (120 ml) heavy cream in a small saucepan until just hot, not boiling. Gradually stir at least half of the hot heavy cream into the egg yolk mixture, and then stir back into hot cream in saucepan. Cook over low heat while stirring constantly until the mixture thickens. Do not boil.
Turn off the heat. Stir in chocolate until melted. Set aside to cool completely.
In a separate bowl, beat 1 1/2 cups (360 ml) heavy cream with electric mixer until stiff. Fold whipped cream into the cooled chocolate mixture with a spatula.
Spoon the mixture into 6 serving glasses and chill in the fridge for at least 1 hour.
Remove from the fridge 15 minutes before serving, then top with extra whipped cream and grated chocolate to serve.
