Ingredients
1cup(225gr)unsalted butter
4oz(110gr)bittersweet chocolate, roughly chopped
3eggs
1cup(200gr)granulated sugar
3tbsp(37gr)brown sugar
1tspvanilla extract
1tspsalt
1/2tspespresso powder
2/3cup(85gr)all-purpose flour
3/4cup(75gr)cocoa powder
Instructions
Cook butter in a medium saucepan over medium heat, stirring often until it foams, then browns for about 5–8 minutes. After it has browned, turn off the heat and remove the butter into a separate bowl. Immediately add in the chopped chocolate and stir until melted. Let it cool completely before using.
Preheat oven to 350F/180°C. Line a 9-inch square pan with parchment paper.
In a medium bowl, sift in flour, cocoa powder, espresso powder, and salt until well combined. Set aside.
With a hand mixer or a stand mixer with a whisk attachment, combine the eggs, granulated sugar, brown sugar, and vanilla. Beat on high speed until completely thickened and fluffy in texture and pale in color for about 8-10 minutes.
Gradually pour in the cooled brown butter chocolate mixture until well combined.
Add the dry ingredients to the wet ingredients. Use a rubber spatula to stir until just combined.
Pour the batter into the prepared pan and smooth out with a spatula. Bake in the preheated oven for 22-25 minutes. Let cool in pan completely before slicing and serving.
