Preheat oven to 375F/200°C. Grease a muffin pan or line muffin tin with paper cases.
Slice the apples into half, remove the core, and slice the apples into thin slices.
Heat water, sugar, and lemon juice to boil. Add apple slices, boil until apple slices are soft. Drain the apples and place them on paper towels to dry and cool completely.
Place the puff pastry on a floured surface. Roll out puff pastry. Cut each sheet of puff pastry into 6 equal long strips. Then spread apricot jam. Place the apple slices. Fold, roll, and place in a muffin tin.
Bake for 45 minutes or until golden and cooked through.
